box (15.2 oz) Betty Crocker™ Super Moist™ Cake Mix Spice

cup Betty Crocker™ frosting vanilla ready-to-spread

1/4

cup apple cider (or hard apple cider for the adults)

1/2

teaspoon apple pie spice

    Preheat oven to 325°F. Peel and dice the apple. Set aside.

    In a large bowl add the cake mix, eggs, water, and oil and whisk until all the ingredients are fully incorporated and batter is smooth.

    Fold in the diced apple pieces.

    Line a muffin pan with liners. Pour or scoop (I like to use an ice cream scoop) batter 2/3 of the way up the liner.

    Bake for 15-20 minutes depending on your oven (until cupcakes spring back to the touch). Remove from oven and let cool on a wire rack.

    While cupcakes are cooling, make the glaze. In a microwave-safe bowl, microwave 1 cup frosting for 30 seconds. Remove and add spice. Thin out with apple cider. If you want a thinner glaze, use more apple cider; for a thicker glaze, use less.

    When completely cooled, remove cupcakes form muffin tin and place on the wire rack that is set on a baking pan or wax paper to catch falling glaze. Using a spoon, drizzle glaze over cupcakes.Let cupcakes sit at room temperature to allow glaze to set, about an hour.

Apple Pie Cupcakes

I saw something similar to these cupcakes on TV one day. I knew I’d probably never make it to the bakery that sells them, so I decided to make them myself.

Ingredients

  • 2 whole Granny Smith Apples
  • ½ cups Light Brown Sugar
  • ½ cups White Granulated Sugar
  • 1 teaspoon Nutmeg
  • 1 teaspoon Cinnamon
  • 1 Tablespoon Butter
  • 1 box (18.25 Oz. Box) Yellow Cake Mix
  • 1-⅓ cup Water
  • 3 whole Eggs
  • ½ cups Vegetable Oil

Preparation

The amount of cinnamon and sugar in this recipe can be adjusted to taste.

Preheat oven to 350 degrees F.

Peel, core and dice apples. Spread in a single layer on a lined cookie sheet.

Sprinkle brown sugar, white sugar, nutmeg and cinnamon over apples.

Bake in the preheated oven for 20 minutes or until apples are cooked.

Remove pan from oven and immediately dump apples and any drippings into a heat resistant bowl.

Stir in butter until melted. Set apple mixture to the side to cool.

In a large mixing bowl, beat cake mix, water, eggs and oil together until blended.

Optional step: Pour apple mixture onto a cutting board or mat, dice (or mash, depending on the texture you want) into tiny pieces.

Mix apples into cake batter.

Scoop batter into cupcake pans (I use an ice cream scoop).

Bake at 350 degrees F for 18 minutes. Test cupcakes by inserting a toothpick in the middle. If toothpick comes out clean, remove cupcakes from the oven. If not, bake for 3-5 more minutes.

Apple Crumble Pie Cupcakes

All of the delicious flavors of Apple Pie without all the hassle. These Apple Crumble Pie Cupcakes are packed with Fall flavors – but are super easy to make! Perfect for Thanksgiving Dessert, Fall Parties, or even a special weeknight dessert.

Oh cupcakes. Cupcakes are so wonderful because you get the goodness of an entire cake wrapped into a few bites.

That means, less guilt right?? Right.

And with all the delicious Fall Baking happening right now, you simple can’t go wrong!

One of the things we love to do with cupcakes is make them “semi-homemade”. Instead of having to measure all of the dry ingredients, one of our favorite things to do is use a Pillsbury cake mix and frosting combination and add extra ingredients to make it unique.

It’s the perfect time of year for these Apple Pie Crumble Cupcakes. My mouth started watering just writing that! This is like a mini apple crumb pie, made extra special with cream cheese and caramel frosting. Let’s get started making these apple cupcakes…

We started with a Pillsbury Traditional Yellow cake mix and then the typical ingredients for a cake mix – eggs and water, but instead of oil, we added applesauce. And it wouldn’t be Fall without spices, so we added cinnamon, crushed cloves and nutmeg.

Then it’s time to fold fresh apples directly into the batter.

Next you will need to prepare the crumble topping, it’s a simple combination of flour, brown sugar, cinnamon and softened butter.

Using a pastry blender, combine the crumble topping.

Then it’s time to bake. Using a cookie dough scoop, divide the batter into cupcake liners and spoon crumb topping on top of the batter.

Into the oven they go to be baked. Because of the addition of applesauce and fresh apples, these cupcakes don’t rise a lot – but don’t worry, they are still delicious.

After the cupcakes are cooled, it’s time to add the luscious frosting. We decided to add two different types of Pillsbury frosting to the top – Creamy Supreme Cream Cheese Frosting and Creamy Supreme Caramel, the combination of both frosting and the moist cupcake, puts this Apple Crumble Pie Cupcake in a league of it’s own.

A good sprinkle of crushed walnuts are added to the top of the cream cheese frosting.

I’m telling you with the spices and apples mixed into the cupcake itself, and cream cheese frosting on top, it would be good enough. But do we leave good enough alone? No. No we didn’t.

We warmed up the Pillsbury Creamy Supreme Caramel Frosting in the microwave for a few seconds and drizzled it all over the cupcakes.

I highly recommend this cupcake for an everyday treat, however it is too good to just keep to yourselves. These Apple Crumble Pie Cupcakes would make the perfect Thanksgiving Dessert or Fall Party like a Bonfire maybe, or even for a birthday celebration.

Perhaps the Pillsbury Doughboy will enjoy an Apple Crumble Pie Cupcakes for his 50th Birthday.

Apple Pie Cupcakes

I’m a great packer.

When it comes to taking trips or going on vacations, I’m typically pretty on top of things and can pack a bag like a champ.

However, I’m not the best un-packer. With the trip in the past and trying to get back into normal life, my bags tend to sit there in my closet until…well, until I need something in there. This continues until I have emptied the contents entirely from necessity.

It’s not the best system in the world, but I don’t break habits easily. (I guess that means I’m not a quitter? Or, just stubborn…)

Case and point? My cupcake addiction. Between these apple cupcakes, these peppermint mocha cupcakes, and these funfetti cupcakes, I’m a goner.

These cupcakes were made back in June, but I had been waiting to post them until the fall season had begun. Technically, fall isn’t for a couple more weeks, but, whatevs. If pumpkin spice lattes are available at pretty much every coffee shop by early September, then fall is in season.

These were a Father’s Day gift, because, for my dad, there is nothing greater than the apple. Nothing. So, it’s safe to say, these were a big hit.

Rich vanilla cake stuffed with gooey, cinnamon-y apple pie filling, topped with a whipped cream frosting = pure goodness. You’ll totally be falling for it.
