Pour a tablespoon of the composition into each form, put 4 grapes and complete with the composition so as to fill 3/4 of the capacity of the muffin tin. After finishing the composition, put the tray in the oven and bake the muffins for 18-20 minutes. We take them out of the oven and leave them in the tray for 10 minutes, after which we can transfer them to a plate.

When they are cold, we serve them with great appetite !! It would be good for the grapes to be seedless, otherwise they will give you a little headache at the tasting :) I was quick today, as well as the recipe;)

Salted fasting muffins with spinach

Ingredient:

- 2 tablespoons flaxseed powder + 6 tablespoons water (this combination will replace eggs)

- 2 cups and a half of wholemeal flour

- a tablespoon of baking powder

- half a teaspoon of baking soda

- a teaspoon of dried Italian herbs

- 2 tablespoons crushed garlic

- 2 hands of fresh spinach, finely chopped

- 100 ml of extra virgin olive oil

- a few slices of browned garlic and slices of cherry tomatoes for decoration (optional).

Method of preparation:

1. Preheat the oven to 150 degrees Celsius.

2. Mix flaxseed powder with water and set aside.

3. In a large bowl, combine flour, baking powder, baking soda, salt and herbs, mixing well. Then add the onion, garlic and spinach, stirring again. Add the flaxseed mix to all this, then water and olive oil and mix everything until you get a smooth dough.

4. Put the muffin papers in the special tray for them, then pour the dough over the forms, filling only two thirds of each. Sprinkle the garlic slices and cherry tomato slices on top.

5. Leave the muffins in the oven for about 25-30 minutes, until they grow and are browned. Leave them to cool in the pan for 5 minutes, then take them out on a plate.

Vegan muffins with bananas and chocolate

Breakfast on the run, dessert or healthy snack, these vegan muffins with bananas and chocolate are easy to make, from ingredients you know and probably already have at home and are perfect for both the little ones and you.

The main ingredient for these delicious vegan muffins are oatmeal, which we will use instead of flour. Full of fiber and nutrients, oatmeal is the perfect alternative to white flour, usually used in muffins and goes great with well-ripened bananas that we will use in the recipe! Vonm turns oatmeal into flour with a blender, so if you find ready-made oatmeal, you can also choose this option.

The other ingredients we will use are, as already mentioned, bananas, which must be very well ripened to give sweetness to our muffins naturally. We will also use cocoa powder, a little coconut sugar (or raw sugar), peanut butter and vegetable milk. All the ingredients mix well, go in the form of muffins in the oven for about 20 minutes and you're done!


In a bowl, mix the rice milk with the orange peel, vanilla essence and oil.

  • orange peel can be replaced with lemon peel
  • rice milk can be replaced with soy milk, almond milk or mineral water

In another bowl mix the flour with the sugar, coconut, baking powder and a pinch of salt. With the aim we make a hole in the middle and pour the liquid composition. Stir until smooth. At the end we incorporate the chocolate drops

  • chocolate drops can be replaced with walnut kernels, shit or candied fruit
  • you can also try frozen fruits

Prepare the tray for muffins with special paper baskets. Put from the composition, about 2 tablespoons, about 3/4 of the height of the paper basket.

Put the tray in the oven over medium heat (or 160 degrees electric oven with ventilation) for about 30 minutes, until the muffins are browned.

Carrot muffins

This recipe is intended especially for children because it contains very healthy ingredients many carrots, nuts, coconut oil and honey. I liked them, honestly I would give up wholemeal flour because I don't like its taste at all but maybe I have a problem with that :). The children ate them with pleasure, as well as those with whom they played outside, in two hours I ran out of muffins. Good sign, right? The recipe for carrot muffins is very simple, although there are many ingredients.

  • 220g flour (120g 000 white flour and 100g wholemeal flour)
  • 250g finely grated carrots
  • 20g ground nuts
  • 2 eggs
  • 100ml milk
  • 25g honey
  • 30g brown sugar
  • 30g coconut oil (or if you don't have regular oil)
  • 100g Greek yogurt
  • 1 teaspoon cinnamon
  • 1 teaspoon grated lemon peel
  • 1 teaspoon baking powder
  • A little salt

1. Preheat the oven to 180 degrees C.

2. In a bowl mix the wet ingredients eggs, oil, yogurt, milk, honey.

3. In another bowl mix the dry ingredients flour, baking powder, grated lemon peel, nuts, salt, sugar, cinnamon.

4. Mix the wet composition with the dry one and add the finely grated carrots. Put the dough in paper forms (fill 3/4 of the forms) and then bake the muffins for 20 minutes.

For more safety we test with the toothpick but be careful the muffins are slightly damp due to the carrots. I left them fixed for 25 minutes.

Let cool and serve.

Optionally you can decorate them with a cream made of 200g whipped cream and 200g fresh cheese to which you add 1 teaspoon of honey.

They are fluffy and fragrant, as I wrote with us, they were consumed quickly.

I have always considered that the simplest recipes are also the best. Grape cake falls into the category simple cake recipes, fast and accessible to anyone.

We do not use the mixer, nor the robot, we do not separate any eggs, we do not have to use the ingredients at any mandatory temperature and we only pollute a single bowl and a spoon.

However, it is definitely one of the best grape cake recipes made and tasted so far. It has a slightly moist consistency and is very fragrant.

I used very sweet little green grapes for this cake. I advise you to use the most aromatic and sweet grapes, black or white, for a perfect result.

Grape Cake & # 8211 Ingredients (round shape with hole in the middle 20 cm Ø)

  • 500 g white or black berries
  • 3 eggs
  • 200 g flour
  • 140 g sugar
  • 120 g butter

I only greased the tray with butter but I know that there is a type of brown and thicker baking paper that is not very good and that sticks to anything I put in the oven. When I went home, my family used such paper and I ruined a cake because of it because it was impossible for me to detach it from the paper.
I advise you to grease with butter and the tray and the baking paper so that you no longer have surprises or change the baking paper.

The muffins with cocoa and cherries are fluffy and very delicious. You wouldn't even think they don't have eggs, butter or milk, they are so good!

Another fasting recipe with a fluffy and very tasty top is that of cake with cocoa and nuts. You can find it posted in this link. You will find all the fasting dessert recipes in one post, which you can see here. I hope it helps and inspires you, because I have prepared almost 70 recipes.

The recipe is cheap. The only more expensive ingredient is the natural vanilla essence, you have the rest of the ingredients at home and it doesn't cost much: flour, sugar, black cocoa, baking powder and water. I did not use vegetable milk, but if I had chosen to use one I would have put an assortment with a neutral taste: soy or rice. Maybe from oats or quinoa with rice. I use the Isola brand and buy it online.

I had cherries in the freezer and thawed them, then let them drain in a strainer. it is important not to leave liquid during baking, otherwise the texture will not be the right one.

Fasting cakes use baking powder or baking soda as a growth agent. No need to exaggerate, especially in the case of baking soda, which has a strong taste.

INGREDIENT:

20 g black cocoa powder

20 ml of sunflower oil

1 teaspoon natural vanilla essence

To make fasting muffins with cocoa and cherries, I started by thawing the fruit, which I then left in a strainer to drain.

In a bowl I mixed the flour with the salt, the baking powder, the sifted cocoa and the cinnamon powder and I mixed them until the composition was homogenized. In another bowl I mixed water with oil, vinegar and natural vanilla essence. I put the sugar in the liquid medium and mixed it with a spoon so that it melts.

I poured the liquid over the solid ingredients, mixed well, then divided the dough into muffin tins lined with baking paper.

I filled them up to 3/4 of their volume, then I put the wallpapered cherries on the side where the pips were removed with flour.

I had 16 cherries, but I put 1, 2 or 3 fruits in the 8 muffins obtained.

I baked them in the preheated oven at 180 ° C for 20 minutes. I think they were ready in 18, but I didn't check.

I let them cool a bit, then ate them with gusto.
