Rolls with spinach and telemea

I put the kneading machine to work. I put in the car bowl, yogurt, salt, soft butter, oil, egg, flour and finally the yeast. I selected the kneading program.

In the meantime, I let the spinach thaw. Then I chopped it, not small. Personally, I don't like finely chopped spinach.

I crushed the telemeau in a bowl, added an egg and chopped dill. I mixed and then I added the chopped spinach and semolina and I mixed again. I let the composition calm down.

I turned on the oven.

I spread the dough in a large sheet, not very thick. I spread the whole filling, leveled and then rolled the whole sheet. I cut 3-finger thick rounds.

I took a tray, placed baking paper and placed the rolls that I greased with beaten egg.

I baked it, over medium heat, for about 40-45 minutes, until it browns nicely.

They are great, literally!

Spinach, cheese and mushroom roll is a delicious cheese appetizer. For this spinach roll recipe you will need 200 g of frozen spinach. In a bowl, mix the yolks with the sour cream. Add the thawed spinach and drain well (in a handful) of water, then integrate the flour mixed with baking powder and salt.

At the end, add the beaten egg whites and mix lightly. Pour the dough into the tray lined with baking paper and bake it in the preheated oven at 180 ° C for 20-25 minutes.
Meanwhile, sauté the finely chopped onion and mushrooms in a tablespoon of oil. We take them out and let them cool. Mix the feta with the cream cheese and telemea, then add the ham. Stir until smooth. Finally add the cooled mushrooms, then mix.
Remove the top, turn it over on a lightly damp towel, sprinkle with grated mozzarella, then the cheese mixture with the mushrooms. I was running easy. We put the roll with spinach, cheese and mushrooms in a foil after it cools, then we leave it in the fridge for at least an hour.

Serve the spinach with spinach, cheese and mushrooms cold.

200 g Telemea cheese
100 g grated cheese
800 g spinach
3 eggs + 1 egg yolk
2 onions
1 tablespoon oil
salt pepper
2 puff pastry rolls [Bella type. You can find the puff pastry in the frozen food section of the supermarkets]

Prepare the filling. Peel a squash, grate it and boil it in salted water. Let it simmer for 10 minutes. Drain it as well as possible. Peel and chop the onion.

Heat the oil, add the onion and cook for 2 minutes, then add the spinach. Leave it on the fire until the water evaporates.

In a bowl, mix the Telemea cheese, grated cheese, spinach and whole eggs. Season with salt and pepper and refrigerate for at least 1 hour.

Meanwhile, preheat the oven to 180 * C [thermostat 6]. Prepare the 2 puff pastry rolls. Remove the filling and place one half on the sheet. Roll the puff pastry inwards. You will get a roll, which you close at both ends. Do the same with the second roll.

Mix the yolk with a tablespoon of oil and grease the rolls with it. Bake for 45 minutes. If you see that it browns too much, cover them with paper.

My secret To bind the cheese, I add 100 g of Mozzarella cheese.

Puff pastry rolls with spinach and smoked cheese

I was absent motivated for a while. It is a well-known fact that we have jobs and we hardly make time to write something here. But that doesn't mean we don't eat, dohh! :)) So today we show you what we are preparing when we are in a time crisis. I used the puff pastry dough I bought, I chose some spinach, a little cheese and the snack is ready for today.

Ingredients for 12 mini rolls:
a defrosted puff pastry dough
500 g fresh spinach
3 green onion threads, finely chopped
smoked cheese given on a small grater
salt pepper

Method of preparation:
1. The thawed dough is carefully spread on a baking sheet (placed in the stove tray).
2. Cook the spinach a little together with the green onions. Season with salt and pepper and leave to cool.
3. Spread the spinach mixture on the entire surface of the sheet and sprinkle with grated cheese.

4. We rolled carefully, then cut the slices neither too thin nor too thick.
5. Put the tray in the preheated oven at 180 degrees and bake for about 25 minutes, until golden brown.

The other day the weather was showing signs that spring was coming, but today everything is frozen and I look anxiously at the hyacinths and tulips in my garden that hurried out. I hope it doesn't affect the frost and to fill my garden with flowers, as soon as possible !!
As I was saying, the other day spring had made its presence felt, the market was full of truffles, which you really couldn't resist. So I took spinach, parsley and green onions with the idea of ​​making a spinach dish, but when I got home I changed my mind. I remembered the Greek pie-Spanacopita, a pie with telemea and spinach, which I had planned for a long time.

I had a package of fresh pie sheets waiting nicely in the fridge & # 8230 not to mention the brine telemeau, from Delaco which I never miss. So I quickly put a salty pie with telemea, spinach, green onions, parsley. Goodness, I ate two slices while they were still hot, as soon as I finished taking the pictures.
From what I read, the recipe for Spanacopita can be done in several variants, with it was homemade as in the recipes below:

The Greeks make it with feta cheese, but it goes very well with quality telemea. In addition to spinach, I also add fresh mint or dill, as well as rice.
I prepared it in the simple version with telemea, Filo pie sheets, spinach, parsley, eggs.
I recommend you try it, I really liked it !!

Telemea and spinach pie - Preparation

Finely chopped onion, cook for 2-3 minutes in olive oil and a cube of butter. Wash the spinach well and cut into strips, add over the hardened onion, mix gently until the leaves soften and harden easily. Set aside and allow to cool.

Chop the telemeau with a fork, add eggs, chopped spinach, chopped parsley, yogurt, mint, salt and pepper to taste.
Mix well until a homogeneous composition is obtained.

For the telemea and spinach pie, you need a tray with detachable edges with a Ø of 21 cm, which is lined with baking paper and greased with butter.
Half of the pie sheets are greased with melted butter and placed one by one in the tray so that the edges remain hanging on the edge of the tray.

Put the cheese and spinach filling, fold the hanging pie sheets and place them on top of the other sheets greased with butter and cut to the diameter of the tray. With a well-sharpened knife, draw the slices (as in the picture) and grease with a beaten egg yolk with a tablespoon of milk.

Telemea and spinach pie is placed in the preheated oven at 180 degrees C for 60 min. If it browns too quickly, cover the tray with baking paper soaked in cold water and squeeze well.
Remove from the oven, remove the removable edge of the tray and allow to cool slightly.

The telemea and spinach pie is portioned with a sharp knife and eaten with great appetite !!

In a bowl put the soft butter, eggs, flour, water and salt. Knead until you get a homogeneous dough that you will put for at least 30 minutes in the refrigerator.
Meanwhile, mix the cheese with the spinach and then add the beaten egg. Add salt and pepper to taste and a nutmeg tip. Mix well until the composition is homogeneous.
Take the dough out of the fridge and divide it into 2 parts. Spread a sheet of dough then cut it with a round lid (to get a perfect circle) and a slicer. Place the dough in a tray lined with baking paper. Place a few tablespoons of the composition in the center, and place the rest of the composition on the edge. Spread the second sheet of dough and place it over the composition (after you have cut it). Place a round bowl (a cup / bowl) in the center of the dough right where you put the composition. With the help of a slicer cut the "flower petals". Check that the 2 parts of the dough are glued very well, then take each petal by hand and twist it so that the composition can be seen.
Grease the tart with beaten egg yolk with milk, then put the tart in the preheated oven for about 50 minutes, until nicely browned.

Spinach roll with cream cheese

1. Melt the diced butter. Add the finely chopped spinach and flour and mix until smooth. Quench with the warm milk added little by little and mix well. Remove from the heat and allow to cool, then add the egg yolks, beaten egg whites, a pinch of salt and pepper.

2. Pour the composition into a tray lined with baking paper and bake in the hot oven for about 25 minutes. After 15 minutes, reduce the heat to medium.

3. Meanwhile, prepare the cream. Strain the fresh cheese and mix with the grated telemeau and Parmesan cheese. Add diced bell peppers and spices to taste.

4. Remove the baking tray from the oven and peel off the baking paper immediately. Place on a dry napkin, then spread the cheese composition and roll carefully. When cool, cut into slices and serve as an appetizer.

andHeat the oil in a larger diameter pan and pour the omelet composition. Bake it for 2-3 minutes on one side and turn it carefully, using a spatula, on the other side (about 2-3 minutes).

Remove the omelet on a flat plate and cut into strips appropriately wide, then roll them carefully so that they do not break. Place the omelet rolls on a slice of bacon or prosciutto and, for safety, stick a toothpick. Garnish with a spinach leaf and serve.
