Homemade pate

Wash the livers well and drain them in a strainer. Meanwhile, cut the onion into small pieces and put it to harden in a little olive oil. After 2 minutes after the onion has softened, add the cleaned carrot and cut the slices. Put the lid on the pan and let the vegetables simmer for another 2-3 minutes.

Add the poultry liver and a cup of water, mix, put the lid on and let it cook for 20 minutes. From time to time we mix with a wooden spoon. Add the mushrooms, brandy, baked pepper paste, mix, put the lid on and leave on the fire for another 10 minutes. Remove the lid, add salt and pepper to taste and leave on the fire for about 10 minutes, until the juice is reduced. We put the hot composition in the food processor and mix until we get a fine paste.

Taste and further complicate with salt and pepper, if necessary, add honey, nutmeg, butter, clean the edges with a spatula, put the lid on the robot, turn and leave until all ingredients are mixed and the paste becomes very fine.

Transfer the composition to glass jars with lids, sprinkle olive oil and spices on top according to taste.
